Job Title Chief Steward

Position Description
  • Establishes cleaning schedules for team members to follow based on the anticipated business volumes of the F&B outlets
  • Establishes par levels and storage requirements for kitchen supplies and equipment needed for the anticipated business volumes of the F&B outlets and convention catering events
  • Assigns work duties to the stewarding team members. Communicates changes or further instructions where needed
  • Inspects quality of work performed by the Stewarding team members in accordance with the Hotel standards. Ensures scheduled cleaning tasks are completed within the specified time frame
  • Maintains sanitation and organization of the Stewarding working area. Rectifies any deficiencies
  • Ensures that the Stewarding team members follow closely to the safety practices
  • Assists in establishing and reviewing labor costs, chemical cost per cover, expenses and breakage and other financial reports; monitors and resolves variances with budget
  • Completes work orders for routine maintenance and repairs of the Stewarding machinery and submits to the responsible departments. Establishes preventive maintenance programs for the Stewarding machinery. Develops contingency plans on unexpected equipment breakdowns or employee accidents.
  • Conducts pre-shift meetings with staff on the assignments, changes in requirements, policies, etc
  • Supervises, mentors, trains, schedules and evaluates team members. Creates a work environment that promotes teamwork, performance feedback, recognition, mutual respect and team member satisfaction
  • Be willing to work any day, any Shift

Position Requirements
  • Primary school or High school graduate, study in F&B or Hospitality preferred

  • Ten years managerial experience in a 4-5 star hotel, quality restaurant or large scale catering operation in a similar role

  • Knowledge of equipment utilized in the kitchens and safety standards
  • Fluent Cantonese, Mandarin and English are mandatory, knowledge in Portuguese preferred
  • Excellent Knowledge in Microsoft Office and Microsoft Outlook Applications
  • Possess good manual dexterity to operate office equipment including a telephone, computer, photocopy machine, fax machine
  • Perform physical job duties of line team members in emergency situations
  • Respond to visual and aural cues
